Lemon Bread


  • 1 1/2 c. flour
    1 tsp. baking powder
    1 tsp. salt
    1/3 c. butter
    1 c. sugar
    2 eggs
  • 1/2 c. milk
    2 tsp. lemon rind
    3 tsp. fresh lemon juice
    Lemon Sugar Glaze:
    3 Tbsp. lemon juice
    1/2 c. sugar


Mix flour, baking powder, and salt. Combine butter, sugar, and eggs in a large bowl. Beat until light and fluffy. Add flour mixture alternately with milk until batter is smooth. Stir in lemon rind and juice. Pour into greased and floured pan. Bake at 350° for 1 hour. Cool in pan for 10 minutes. Then turn out on rack. Brush with lemon glaze. Lemon Sugar Glaze: Combine lemon juice and sugar in a small bowl (sugar does not have to be dissolved). Yield: 1 full loaf or 4 mini loaves.
